Ridge Gourd Soup
This soup jogged my memory of residence…
Ridge gourd is a vegetable seasonal in the summertime. Regardless of the onerous ridges, the flesh is tender, juicy and has a delicate sweetness.
Components:
four ridge gourd, peeled and minimize
1 piece of ginger, thinly sliced
5 shrimps
5 scallops, halved
2 tsp sake
1 inexperienced onion (sliced)
Marinate shrimp and scallop with 1 tsp sake
In a pan, warmth up 1 tbsp of oil, add ginger, stir fry for one minute, add the gourd, stir fry till softened.
Add ~ 1.5 cup of sizzling water. As soon as it involves a boil, add shrimp, scallops and 1 tsp sake. Cook dinner for about 1 minute, flip off the warmth. Season with salt and inexperienced onion. Serve over a cup of rice noodle.
It’s an ideal fast meal for summer time nights.
