Quinoa + Shrimp + Black Bean Sauce
Quinoa – sauté finely chopped onion in oil till softened. Add quinoa, inventory or water (1:1.5 ratio). Carry it to a boil then simmer coated till executed. Fold within the child spinach.
Shrimp – seasoned with lemon, salt, black pepper and taco seasoning. Fry on flippantly oiled pan till executed.
Black bean sauce – taco seasoning, purple chili pepper flakes, water, lemon juice. I additionally used up leftover corns from lunch 😜
