Pumpkin Beef Stew
Pumpkin is one thing I can’t go with out within the fall. I may have it three meals right now, plus espresso, plus deserts… 😜
This stew may be very hearty and has all the things you want for a balanced meal.
2 piece boneless brief rib (lower into 2 inch chunk)
1/four pumpkin (cubed)
three potato (peeled and halved)
2 cup Brussel sprout
In a dutch oven, sear the meat brief rib. Season it with salt and pepper and 1-2 tbsp wine.
Add two cups water, pumpkin, potato, tomato, convey it to boil. Flip down the warmth and simmer for at the least one hour. Add Brussels sprouts 10 minutes earlier than the cooking is finished.
