Pickled Daikon
That is undoubtedly the winner! Crunchy and refreshing – excellent for the summer time!
Peel and lower one massive daikon into finger lengthy stripes. Therapeutic massage them with 1 tbsp salt and let sit for about 30 minutes (or longer).
Rinse with water and drained. Soak them within the marinate over night time. I stored them cool within the fridge.
Marinate
three tbsp white vinegar,
three tbsp sugar,
half lemon (juiced)
Pink pepper (diced)
