FASOLATHA BOLOGNAISE, butter bean and mince stew

When half the household desires fasolatha (Greek butter bean stew) and the opposite half need bolognaise, why not mix the 2!

This flavour packed bowl of goodness has butter beans, celery, pork mince, bacon, carrots and a mixture of spices.

Tonight I topped it with crunchy bacon croutons, a aspect of chilli oiled feta and sourdough bread.

That is what you have to

Serves 5 hungry Greeks

four cups of dried butter beans (soaked in a single day)
Boil beans till tender, 20 minutes, pressure and put aside.

Bolognaise sauce
1 onion diced
three cloves of garlic minced
Half a celery chopped
2 carrots
250 grams of pork or lamb mince
1 tsp of curry powder
1 tsp candy paprika
1 cup of tomato pure
2 tablespoons of capsicum purée
three rashes of bacon diced
2 rashes of bacon in your croutons
four cups of vegie inventory

Begin by frying up your onion and garlic, add spices.
Add celery, bacon and cook dinner for ten minutes.
Add tomato and capsicum purée
Final add mince, cook dinner until brown after which add four cups of vegie inventory, simmer for 20 minutes.

Pour the above into a big pot along with your beans and simmer for an extra 20 minutes. You might want extra inventory or water.
