CURRY CHICKEN RISSOLES
Its curry night time at our place tonight 💃
These tremendous moist and juicy rissoles drenched in a coconut curry sauce hit the spot 🥳
Components (serves 4)
500 grams of rooster mince
1 very finely diced onion
2 cloves of garlic minced
1 cups of breadcrumbs
2 cups of finely chopped parsley
1 egg to bind
Salt and pepper
Evenly pan fry the rissoles till golden brown.
Maintain the pan juices for later
2 finely diced onions
three cloves of finely diced garlic
1 teaspoon of diced ginger
1 tbls of turmeric
half of tsp of cumin
1 tbls gentle curry powder
Four cups of vegetable inventory
2 bay leaves
1 tin of coconut milk
Pan fry onions and garlic within the juices out of your rissoles, and a tad extra olive oil.
Add in all of the spices and prepare dinner for an extra 5 minutes. Pause and odor these aromas 😇
Add inventory and rissoles into the pan and simmer for 20 minutes.
Lastly add in your coconut milk and simmer for an extra 15 minutes.
Serve with jasmine rice.
