Tonight’s dinner was random however tremendous scrumptious!
three cups of dried chickpeas soaked in a single day.
1 entire onion diced
four cloves of garlic minced
1 purple capsicum sliced
1/four cup of excellent olive oil
1 tsp of cumin
1 tbls of curry powder
1 tsp of turmeric
1 tsp minced ginger
1 litre of vegetable inventory
1 cup of coconut milk
Pan fry onion, garlic and capsicum.
Add in your spices and cook dinner for an additional 5 minutes.
Add in chickpea and inventory and simmer for 25 minutes.
Add in coconut milk and cook dinner for an additional 10 minutes.
I served this with caramelised onions and rice. Subsequent time I’ll add extra of the caramelised onion, it’s a match made in heaven 😇
