Crispy Potato Truffles/ Scollops with

Some days you simply want consolation meals ☺️

Now my mother and father made the perfect ever fish and chips and potato scollops. They’d promote three for 20 cents of their little busy fish store, I do know I do know displaying my age right here however hey 🤷‍♀️

So I went again to my childhood tonight, battered some potatoes and sprinkled some feta excessive, that’s Monday sorted.

Right here’s what I used for the batter

1 cup plain flour
1 tsp baking powder
half of tsp salt
half of cup milk
half of cup water

I Par boiled my potatoes earlier than slicing, battering and deep frying.
