Cauliflower Fried Rice

This isn’t fried cauliflower rice 🤪 Despite the fact that I like cauliflower, I’m not a giant fan of cauliflower rice. The feel is simply too mushy for me. I like meals with a bit crunch.

So as an alternative, I make fried rice with diced cauliflower.

Components:
1 head of cauliflower (diced)
2 cups brown rice (cooked)
2 egg

A couple of notes:

Use leftover rice, in a single day within the fridge is most well-liked.

Be sure cauliflower is nearly cooked earlier than including rice in.
