1 massive yellow onion, chopped
1 massive carrot, chopped
three mini purple bell pepper, chopped
four cans black beans, rinsed and drained
½ teaspoon dried oregano
Sauté veggies with 1 tbsp oil, add beans, broth and spice, carry it to a boil and simmer for about 20 minutes.
Use an immersion mix to mix half of the soup. Combine properly.
Serve it with cilantro, Greek yogurt (optionally available), lemon and tortilla chips.
